Our Story

In late 2013, my second son was born. I had two remarkable boys, each under 18 months old. No one in our house was sleeping. Literally, no one.

As you could imagine, we were guzzling a lot of coffee... So much so, that I started to develop a sensitivity to the acidity found in “traditional” coffee. I was faced with giving up the one thing that was keeping me awake and functioning.  

One night I discovered a small coffee shop on the west coast that was “cold pressing” coffee. They spoke about the potential benefits and the lack of acidity in their process. This was 2013, way before any of the national coffee chains started mass producing cold brew for grocery shelves or drive thru’s. That next day I awoke, assembled my tools and tried my very first cold brew… Cooperage Coffee was born.
